Glorious winter greetings to you all.
Just six more weeks until Winter Solstice, the mid- point of winter. It may be hard to believe that we are already into winter if you go by the temperature, but not if you feel the squeeze between sunrise and sunset as the days shorten more and more. The shortest day (solstice) marks the middle of the winter, so we are well on our way.
The snapping turtles are burying themselves in the mud to await the opening of fairy gates in May before they roam again. The squirrels are frantically hiding more acorns in preparation for snoozing and feasting through the cold days to come. The goldfish in the pond are schooling close to the surface soaking up the sun, but we (and the heron) know they will soon dive deep and hunker down under the ice. Vees of geese honk across the crisp skies, and there was a great gathering of turkey vultures spiraling in the air last week. Perhaps they were planning their migration to Florida? They must be the original “snow birds.”
After I vote, I am hopping a plane to Australia, where they are just beginning summer. I will be there for the rest of the month, having Goddess Festival fun and teaching in cities and schools from the south coast to the north coast. I will do my best to send you an ezine from Down Under in two weeks, if technology is kind to me.
When I return home, we will have at more work weekends at Laughing Rock Farm. We will definitely work on December 3-4, and possibly on December 10-11, depending on the weather. We look forward to spending time with you, as always. Give us a call if you plan to come. Yes, we will press cider both weekends!
What are you eating these days? Cabbage and carrots, kale and turnips, collards and broccoli and leeks are still growing in the garden, and will withstand very cold nights, but we have harvested and stored all the sunchokes, winter squash, garlic, and onions, which are not so cold hardy.
We are still picking lots of wild greens for our salads, digging roots, and making remedies. This week we made salad every night, fresh nettle soup with tender new nettle tops, white pine vinegar from a branch thrown down by the wind, and yummy Triple Goddess Vinegar.
