Winter Salads, Part 1
Here are the hardy greens that we enjoy in our salads until the ground is covered with snow.   Green blessings are everywhere and everywhen, too.




Garlic Mustard (Allaria off.)
The hardiest of the salad greens. We will enjoy its tang for as long as possible now, harvest roots when we can in the winter, and still enjoy lots next spring.







Lady’s Bedstraw/Wild Madder
(Gallium mollugo)

Still in bloom here and there, the wild madder is another super hardy green that we enjoy all winter. The delicate white flowers – which give this plant the common name “False Baby’s Breath” – are edible too.



Cheeses
(Malva neglecta)
Though the leaves look fuzzy, Malva is surprisingly mild and happy on the tongue. The more you pick, the more you get, so put a lot in your winter salads. We do.
