African Peanut Butter Soup
This is one of the classic dishes of Africa, with hundreds of variations, including this atypical meatless version.
Serves 6
Saute
1 large onion, chopped in a soup kettle using about
2 tablespoons pure olive oil
5-10 minutes, stirring often.
Then add
2-4 cloves garlic, sliced thinly
½ teaspoon freshly ground* cumin seed
½ teaspoon freshly ground coriander seed
½ teaspoon seasalt
Saute until all is translucent, 2-5 more minutes.
Stir
2 cups warm water
into
1 cup peanut butter (I prefer crunchy, but smooth works too)
Add to the onions and garlic along with
4 cups cold water
2 large sweet potatoes, cut into 1 inch cubes
2-4 cups fresh tomato, chopped (or 1 14.5-ounce can crushed plum tomatoes)
